Japanese Beer-Battered Frito Misto

These tasty beer-battered fish, shrimp and veggies are way prettier than your usual pub variety.

Ingredients

  • 4 half fillets sea bream
  • 2 shrimp, peeled and deveined
  • 2 bulb spring onions, cut into bite-sized pieces
  • 1 myoga (Japanese ginger), cut in half
  • 2 broccoli raab, cut off tough stems and cut into 10 centimeters length
  • 2 fukinoto (butterbur sprouts), cut off tough base
  • 2 pieces bamboo shoots
  • Lemon
  • Batter:
  • 70-80 milliliters beer
  • 50 grams flour
  • 1 tablespoon potato starch
  • Pinch of salt
  • 1 egg yolk
  • Seasonings:
  • Sansho (Japanese pepper)
  • 1 teaspoon salt

Steps

  1. Season the sea bream fillets with salt. Prepare the rest of your ingredients.
  2. Combine the sansho and salt and set aside.
  3. Mix together ingredients for the batter and mix well.
  4. Quickly dip ingredients into the batter and deep-fry at 180 degrees C until crispy.
  5. Enjoy with sansho and salt mixture.
