Juicy Parmesan & Pesto Burger

We see your basic burger and raise you this insane, mac 'n' cheese-stuffed pesto burger.

Ingredients

Parmesan-Stuffed Burger

  • 1 Lb gound steak
  • 2 tbsp mild paprika
  • 1 tsp chili flakes
  • 3 tbsp worcestershire sauce
  • 1 tsp dried onion
  • 1 cup grated young parmesan cheese
  • 1/2 cup grated mozzarella

Pesto Mac 'n' Cheese

  • 1 Cup Cooked Macaroni al Dente
  • 1 Cup fresh basil
  • 1 Grated Parmesan Cheese
  • 1/2 Mozzarella Cheese
  • 1 tbsp Grated garlic
  • 1 tsp sea salt
  • 1 tbsp grated black pepper
  • Extra Virgin Olive Oil
  • 1/4 cup heavy cream

Assembly

  • 2 Fried eggs
  • Parmesan shaves
  • Chili flakes
  • 2 burger brioche buns seared in the griddle
  • 4 tbsp pesto
  • 1 tbsp Butter
  • 2 Parmesan stuffed burgers
  • 3 cups french fries

Steps

Parmesan-Stuffed Burger

  1. Mix together in a large bowl the ground steak, paprika, chili flakes, worcestershire sauce, and dry onion
  2. Press one big scoop of the mix to form a half an inch disc
  3. in the center of this dicsc put 1/2 cup grated parmesan cheese amd 1/4 cup grated mozzarella, and cover with an other half an inch grated steak mix
  4. Repeat the process and chill in the freezer for 15 minutes

Pesto Mac 'n' Cheese

  1. In a blender mix fresh basil, 1/2 cup grated parmesan cheese, grated garlic, salt and pepper
  2. Once everything is finely chopped, add Extra Virgin Olive Oil until the mix gets a waterish but scoopable thickness
  3. Add the heavy cream and mix for only 30 seconds or until well combined
  4. Mix the pesto, 1/2 cup grated mozzarella cheese and 1/2 cup remaining Parmesan cheese in a bowl
  5. Add hot macaroni al dente right before putting together the burgers
  6. Reserve 4 tbsp of pesto for the burger buns

Assembly

  1. Sear the burgers in a griddle or plancha for 5 minutes on each side and let to rest
  2. Sear brioche buns cut side down in the grease of the burger and add a tbsp of butter
  3. Once golden, place a tbsp of pesto on each cut side of the bun
  4. In order, top with the stuffed burgers, mac n' cheese, one fried egg each, shaved parmesan and chili flakes to taste
  5. *a metal cake ring the size of your burgers can be useful for the forming of the final burger
  6. Serve with french fries and more sauce for dipping, if desired
