Think of this as a cuter, fluffier version of dessert crêpes.
150 grams flour, sifted
1 tablespoon baking powder, sifted
30 grams honey
30 grams sugar
50 milliliters milk
1 teaspoon mirin
1 teaspoon soy sauce
200 grams anko (sweetened adzuki bean paste)
3 whole strawberries, hulled and cut in half
100 grams whipped cream
In a bowl, combine eggs, honey, sugar, milk, mirin and soy sauce and mix well. Add in flour and baking powder and gently fold in until combined. Let batter rest in the refrigerator for 30 minutes.
Transfer batter into a squeeze bottle.
Lightly grease a skillet and heat over low heat.
Squeeze batter onto skillet sketching a picture of Doraemon.
Once it dries, squeeze batter on top, filling in the spaces.
Once it's ready, flip it over and cook the other side.
Cook one more pancake normally, making it approximately the same size as the first pancake.
Transfer the normal pancake onto a serving plate. Top with anko, strawberries and whipped cream.
Top if off with the Doraemon pancake and serve immediately.
