Jungle Chicken

With sweet pineapple and a curried yogurt marinade, this is roasted chicken like you've never tasted.

Ingredients

  • 1 whole chicken
  • 1 sheet banana leaf
  • 100 grams plain yogurt
  • 1 tablespoon ketchup
  • 4 teaspoons curry powder
  • 2 teaspoons grated ginger
  • 2 teaspoons grated garlic
  • Pepper
  • 1 teaspoon honey
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • 1/2 apple
  • 1/2 pineapple
  • 1 kiwi
  • 1 bulb garlic

Steps

  1. Cut halfway down the middle of the chicken and spread it open onto the banana leaf. Secure with wooden skewers.
  2. Arrange apple, pineapple, kiwi and garlic on and around the chicken.
  3. Combine yogurt, ketchup, curry powder, ginger, garlic, pepper, honey, paprika and olive oil and pour over the chicken.
  4. Secure banana leaf with wooden skewers. Bake for 45-60 minutes at 180 degrees C.
