Kale Quiche: packed with sautéed kale, swiss cheese, ham and parmesan, this quiche will be your new favorite brunch item! Make it over the weekend and reheat for breakfast during the week.

Kale Quiche


  • 5 ounces kale

  • 4 slices ham

  • 4 puff pastry squares (5'x5')

  • 4 ounces swiss cheese

  • 2 eggs

  • 4 Tablespoons heavy cream

  • 3 Tablespoons olive oil

  • 7 Tablespoons parmesan cheese

  • 1 teaspoon minced dill

  • Pinch of salt


  1. In a medium size pan add the olive oil and the kale.

  2. Adjust with a pinch of salt and sauté for 5 minutes stirring occasionally. Turn the heat off and set it apart.

  3. In a medium bowl add the eggs, the heavy cream, the grated Parmesan cheese and the minced dill. Mix.

  4. Place a puff pastry square in a mini quiche mold. Cut out the excess pastry with a knife.

  5. Layer one slice of ham at the bottom, add the swiss cheese in cubes on top and 1 or 2 tablespoons of kale.

  6. Cover with 2 tablespoons of egg mix.

  7. Bake in preheated oven at 400F for 30 minutes. Enjoy!
