Kale Quiche: packed with sautéed kale, swiss cheese, ham and parmesan, this quiche will be your new favorite brunch item! Make it over the weekend and reheat for breakfast during the week.
5 ounces kale
4 slices ham
4 puff pastry squares (5'x5')
4 ounces swiss cheese
4 Tablespoons heavy cream
3 Tablespoons olive oil
7 Tablespoons parmesan cheese
1 teaspoon minced dill
Pinch of salt
In a medium size pan add the olive oil and the kale.
Adjust with a pinch of salt and sauté for 5 minutes stirring occasionally. Turn the heat off and set it apart.
In a medium bowl add the eggs, the heavy cream, the grated Parmesan cheese and the minced dill. Mix.
Place a puff pastry square in a mini quiche mold. Cut out the excess pastry with a knife.
Layer one slice of ham at the bottom, add the swiss cheese in cubes on top and 1 or 2 tablespoons of kale.
Cover with 2 tablespoons of egg mix.
Bake in preheated oven at 400F for 30 minutes. Enjoy!
