Avoid this rookie mistake and use the right oils when cooking at home.

Ingredients

  • 1 cup coconut oil, melted
  • 1 cup white sugar
  • 1 cup light brown sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 3 cups all purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon sea salt
  • 2 cups chocolate chunks (or chips)

Steps

  1. Preheat oven to 375 degrees.
  2. Line a baking pan with parchment paper and set aside.
  3. In a bowl mix flour, baking soda, salt, baking powder. Set aside.
  4. In a separate bowl, cream together melted coconut oil and sugars until combined.
  5. Beat in eggs and vanilla until fluffy.
  6. Mix in the dry ingredients until combined.
  7. Add 2 cups chocolate chunks and mix well.
  8. Roll 3 tablespoons of dough at a time into balls and place them on prepared cookie sheets.
  9. Bake in preheated oven for approximately 8-10 minutes. Take them out when they begin to brown slightly.
  10. Let them sit on the baking pan for 2 minutes before removing to cooling rack.

  • 4 tablespoons olive oil, divided
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 1 ¼ lbs fresh shrimp
  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon dried oregano
  • 4 cups baby spinach
  • 8 oz linguine, cooked
  • ¼ cup freshly grated parmesan cheese
  • 2 tablespoons fresh parsley
  • 1 tablespoon lemon juice

Steps

  1. Heat 2 tablespoons of olive oil. Add garlic and crushed red pepper. Cook until fragrant.
  2. Toss in shrimp, salt and pepper to taste. Stir until shrimp start to turn pink, but not fully cooked.
  3. Add oregano, and spinach. Cook until wilted.
  4. Add cooked pasta, additional 2 tablespoons of oil, parmesan and parsley. Mix well.
  5. When shrimp are cooked, add lemon juice. Serve while hot.
