Kitty Cat Cupcakes

These delicious chocolate chip cupcakes are decorated to look like fluffy white kittens!

Ingredients

Cupcake Batter

  • ½ cup unsalted butter, room temperature
  • 1 cup sugar
  • ½ tsp vanilla extract
  • 3 eggs, room temperature
  • 1 ½ cups all-purpose flour
  • ½ tsp baking soda
  • ½ tsp salt
  • ¾ cup sour cream
  • 1/3 cup mini chocolate chips
  • 1/3 cup white chocolate chips

Buttercream

  • 2 cups unsalted butter, room temperature
  • 1 tsp vanilla extract
  • 5 cups confectioner’s sugar
  • black food coloring
  • pink food coloring

Steps

Cupcake Batter

  1. Beat the butter and sugar with an electric mixer until pale and fluffy. Add the vanilla extract and eggs one a time, mixing with each addition.
  2. In a separate bowl, combine the flour, baking soda and salt. Add this to the batter in 2 additions, alternating with the sour cream.
  3. Add the mini chocolate chips and dark chocolate chips and mix to combine.
  4. Pour the batter into a lined muffin tin.
  5. Bake at 350F for 20 minutes, or until a skewer inserted into the cupcakes comes out clean.
  6. Cool in the pan for 10 minutes, then transfer them to a wire rack and cool completely.

Buttercream

  1. Beat the butter with an electric mixer until pale and fluffy. Add the vanilla extract and beat until combined. Add the confectioner’s sugar one cup at a time, then beat for 3-5 minutes, until fluffy.
  2. Dye ¼ cup buttercream black and ¼ cup buttercream pink.
  3. Place the black and pink buttercream into piping bags fitted with small, round piping tips.
  4. Place ½ cup of the white buttercream in a piping bag fitted with a #103 piping tip. P
  5. lace the remaining white buttercream in a piping bag fitted with a #133 grass piping tip.
  6. Working from the center of the cupcake outwards, pipe long strands of fur with the white buttercream fitted with the #133 grass piping tip. Position the piping bag vertically above the center of the cupcake and pipe a dollop of buttercream, creating the nose.
  7. Use the white buttercream in the piping bag fitted with the #103 piping tip to pipe ears, then use the pink buttercream to create pink centers of the ears, as well as a tiny pink nose.
  8. Use the black buttercream to pipe the eyes and mouth. Enjoy!
