Lasagna Roll Ups

This cheesy, meatless lasagna made with eggplant, spinach and more may be the heartiest dish you make all week.


  • 1 large eggplant, sliced lengthwise into 8 pieces
  • Olive oil for sautéing
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon dried oregano
  • 1 can cannellini beans, drained
  • 1 cup whole milk ricotta
  • 2 cups frozen spinach (thawed and drained = 1/2 cup)
  • Salt and pepper, to taste
  • 7 fresh basil leaves, chopped
  • 7 lasagna sheets, cooked
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup shredded Parmesan cheese
  • 1 (24 ounces) jar of your favorite marinara sauce


  1. Roast the eggplant. Slice the eggplant lengthwise into 8 pieces. Arrange on a baking sheet, drizzle with olive oil, salt and pepper, and bake at 450°F until tender and slightly charred. Remove from oven and set aside.
  2. Cook noodles according to package instructions. Strain and set aside.
  3. Make the filling. In a large skillet, heat 3 tablespoons olive oil on low heat and sauté the garlic for a few minutes. Add the chili flakes and oregano and cook about 2 more minutes. Add the can of beans and cook, whisking, until the beans begin to soften and break up. Add the ricotta and spinach and season with salt and pepper. Sprinkle in the basil and set aside.
  4. Assemble the roll ups. Lay down a cooked lasagna sheet, spread over some of the bean and ricotta mixture, sprinkle with a little mozzarella cheese, halve a piece of the cooked eggplant and lay both pieces on top of the cheese, sprinkle with Parmesan, and roll.
  5. Spread at least 1/2 cup of the marinara sauce on the bottom of the pan, then arrange the rolls seam side down in the baking dish. Repeat with remaining lasagna sheets. Pour the rest of the marinara sauce over the rolls, filling in all the gaps. The more the better! Sprinkle the top with more cheese.
  6. Cover with aluminum foil and bake at 375°F for 30-45 minutes. Remove the foil, turn the heat up to 450°F and cook until the cheese browns slightly. Serve!
