Leftover Thanksgiving Egg in the Hole

Take your egg in the basket to the next level with post-Thanksgiving deliciousness.


  • Leftover dinner rolls
  • Leftover mashed potatoes or sweet potatoes
  • 1/2 cup shredded cheese (optional)
  • Leftover turkey, shredded
  • Leftover veggies (optional)
  • Leftover gravy
  • Leftover stuffing
  • Eggs
  • Melted butter
  • Leftover cranberry sauce


  1. Preheat oven to 400°F.
  2. Hollow out rolls with a paring knife. Toast rolls for 3-5 minutes until lightly golden.
  3. Layer rolls with mashed potatoes, cheese, turkey, gravy and stuffing. Press down and make a hole for the egg to nestle egg in, brush with butter and bake for 5-10 minutes depending on how runny you like your yolk. Drizzle with with gravy, dollop with cranberry and serve warm!
