Lemon Basil Crème Brulee

This may be the second most pleasurable experience of your life.

Ingredients

  • 3 cups pouring whipping cream
  • 1 vanilla bean, split lengthways, seeds scraped
  • 1 small basil bunch tied together
  • 6 egg yolks
  • 1/3 cup sugar, plus 1/2 cup for garnish
  • 1/2 cup lemon curd

Steps

  1. Preheat oven to 315F.
  2. Place 6 ramekins in a roasting pan and spread 2 tablespoons of lemon curd into the base of each.
  3. Put cream, vanilla seeds, vanilla pod and basil bunch in a medium saucepan and bring almost to a boil.
  4. Simmer until the basil is limp, 5 minutes.
  5. Remove from heat and using tongs to remove the basil and vanilla pod.
  6. In a large bowl whisk the egg yolks and sugar.
  7. Slowly whisk in the hot cream mixture until just combined. Pour into each ramekin equally.
  8. Use a spoon to remove any bubble from the surface of the ramekins.
  9. Pour enough boiling water into the roasting dish so it comes halfway up each ramekin.
  10. Bake for 30 minutes until set but a little wobbly.
  11. Transfer the ramekins to a wire rack and set aside for 15 minutes to cool slightly then place in the refrigerator to chill.
  12. Sprinkle the custard evenly with sugar and torch to caramelize the sugar.
