Ingredients

Lemon Macarons

  • 1 large egg white
  • 1/2 teaspoon powdered egg whites
  • 1 1/2 tablespoon granulated sugar
  • 7 tablespoons confectioners' sugar
  • 1/2 cup almond flour
  • Zest of 1/2 lemon
  • Yellow food coloring

Cream Cheese Filling

  • 2 ounces cream cheese, softened at room temperature
  • 3 1/2 tablespoon heavy cream
  • 1 1/2 tablespoon granulated sugar
  • 1 tablespoon lemon juice
  • Blueberries
  • Mint

Steps

Lemon Macarons

  1. Sift together the confectioners' sugar and almond flour.
  2. Set aside.
  3. In a bowl, beat together the egg white and cream of tartar until soft peaks form.
  4. Add the granulated sugar and beat until stiff peaks.
  5. Add a few drops of yellow food coloring and mix it in.
  6. Gently fold in the confectioners's sugar, almond flour and lemon zest to the batter. About 30 strokes. The batter will be thick, glossy and sticky.
  7. Pipe the batter onto a baking sheet lined with parchment paper. You want the rounds to be around 2 inches in diameter.
  8. Once you're done piping, let them rest for 30-60 minutes. The tops of the cookies should be dry to touch.
  9. Bake for 15 minutes at 250 degrees F.
  10. Take out and let them cool.

Cream Cheese Filling

  1. To make the filling, whip the cream until stiff peaks.
  2. Add in cream cheese, granulated sugar and lemon juice and mix to combine.
  3. Sandwich the cream cheese filling and blueberries between two macaron cookies.
  4. Decorate with additional cream and mint if desired.
