Lemon Olive Oil Cake

Mix up your lemon cake routine by replacing butter with rich and flavorful olive oil.

Ingredients

  • 1 cup extra virgin olive oil
  • 1/2 cup whole milk
  • 1 cup sugar + 1/4 cup for glazing lemons
  • 1/4 cup honey
  • 1/2 cup plain yogurt
  • 2 eggs
  • 2 cups all-purpose flour
  • 1/2 cup semolina flour
  • 1 tablespoon baking soda
  • 2 lemons
  • 3 shots of rum

Steps

  1. Preheat oven to 335°F.
  2. In a bowl, combine the olive oil, milk, 1 cup sugar, honey, yogurt and eggs; stir to combine. When smooth, add the flour, semolina, baking soda and the zest and juice of one lemon. Mix, then add the rum. Continue to mix until combined. Pour into a greased springform pan. Bake for 45-55 minutes, then let cool slightly.
  3. To make the lemon topping, cut thin slices of lemon. Lay them out on a cookie sheet covered with parchment paper or a rubber mat. Sprinkle 1/4 cup sugar over the top. Bake at 275°F until glazed, about 40 minutes.
  4. Top cake with sliced lemons and enjoy.
