Lemon Ricotta Pancake in a Rice Cooker

Ingredients

  • 2 1/2 cups pancake mix

  • Zest from one lemon

  • 2 2/3 cups skim milk

  • 2 cups skim ricotta cheese

  • Whipped cream

  • Sugared lemon zest

Instructions

  1. Whisk together pancake mix, skim milk and ricotta cheese. Add the lemon zest.

  2. Pour batter into rice cooker pan.

  3. Use the white rice setting to cook the pancake.

  4. Let the pancake cool slightly; turn over to plate.

  5. Serve with lightly sweetened whipped cream and sugared lemon zest.
