Mango Coconut Lemonade Slushy


  • Coconut Slushy:
  • 1 can coconut milk, made into ice cubes
  • 1/2 cup lemonade
  • 1 tablespoon simple syrup
  • Ginger Syrup:
  • 1/2 cup sugar
  • 1/2 cup water
  • 1-inch knob of ginger, sliced
  • Mango Slushy:
  • 2 mangoes
  • 5 ice cubes
  • 1/2 cup lemonade
  • Garnish:
  • Mint leaves
  • Lemon or mango slice
  • Toasted coconut flakes


  1. Pour the can of coconut milk into an ice cube tray and freeze until hard.
  2. Place the frozen coconut milk ice cubes into a blender with the lemonade and simple syrup. Blend until fully combined.
  3. For the ginger syrup, add sugar, water and slices of ginger into a sauté pan, and cook for 10 minutes. Set aside and cool.
  4. Slice and peel the mangoes and put into the blender. Add ice cubes, ginger syrup and lemonade and blend until fully combined.
  5. To assemble, add a little bit of the coconut slushy in a glass and layer with mango slushy then coconut slushy again, and finish with a mango layer.
  6. Garnish with toasted coconut flakes, mint leaves and a lemon slice. Enjoy!
