Lemongrass Shrimp Lollipops

Lemongrass shrimp lollipops are the perfect app for any occasion, from parties to weekday Thai cravings.

Ingredients

  • Paste:
  • 1 pound 16 -20 shrimp
  • 4 strips bacon
  • 8 cloves garlic
  • 1/2 tbsp flour
  • 1/2 tbsp potato starch
  • 2 tsp ginger, chopped
  • 1 tbsp brown sugar
  • 1 pinch black pepper
  • 2 celery stalks
  • 1 whole banana pepper. chopped
  • 1 red chili
  • 2 tsp of fish sauce
  • celery leaves from 4 stalks
  • 4 sprigs cilantro
  • Sauce:
  • 1/3 cup rice wine vinegar
  • 1/4 cup of fish sauce
  • 1 red chili, minced
  • 1 tsp brown sugar
  • lemongrass stalks, outer leaves peeled and cut into 6in
  • butter lettuce leaves
  • cilantro
  • mint

Steps

  1. Place all the paste ingredients in the food processor. Roll the paste around top of lemongrass stalk.
  2. In a steamer insert, bring water to a boil. Steam pops for 5 minutes.
  3. In a large skillet over medium-high heat, add 2 tablespoons of olive oil and a pinch of brown sugar. Pan sear the pops for 2 to 4 minutes until golden brown.
  4. In a small bowl, mix the chili, garlic, vinegar and fish sauce. On a platter add fresh herbs, butter lettuce, pops and the sauce. Serve.
