1 cup dried lentils
2 onions, diced
1 red pepper, chopped
1 carrot, chopped
1 garlic, chopped
¾ cup pancetta, diced in small cubes
4 cups vegetable broth
Olive oil, for cooking
Black pepper, to taste
Crushed red pepper, to taste
In a saucepan, add olive oil and onions, sauté until golden brown. Season with pepper and stir together.
Next, add the red pepper, garlic, carrot, and pancetta, and cook until golden brown.
Add in the lentils and potatoes, stir together then pour in the vegetable broth. Mix well.
Cook covered for 1 hour.
Top with crushed red pepper for desired taste, and serve.
