Ingredients
- 1 cup dried lentils
- 2 onions, diced
- 1 red pepper, chopped
- 2 potatoes
- 1 carrot, chopped
- 1 garlic, chopped
- ¾ cup pancetta, diced in small cubes
- 4 cups vegetable broth
- Olive oil, for cooking
- Black pepper, to taste
- Crushed red pepper, to taste
Steps
- In a saucepan, add olive oil and onions, sauté until golden brown. Season with pepper and stir together.
- Next, add the red pepper, garlic, carrot, and pancetta, and cook until golden brown.
- Add in the lentils and potatoes, stir together then pour in the vegetable broth. Mix well.
- Cook covered for 1 hour.
- Top with crushed red pepper for desired taste, and serve.
