Why simply stir crab meat into fried rice when you can also pour it as a sauce?

Lettuce Fried Rice with Crab Sauce


  • Fried rice:

  • 1 tablespoon sesame oil

  • 1 egg plus 1 egg yolk, beaten

  • 1 1/2 cups cooked rice

  • 40 grams crab meat, drained

  • 3 lettuce leaves

  • 1 tablespoon chopped green onions

  • Salt

  • 1 teaspoon soy sauce

  • Crab sauce:

  • 1/2 teaspoon sesame oil

  • 20 grams scallions, minced

  • 10 grams ginger, minced

  • 2 teaspoons sake

  • 400 cc water

  • 1 teaspoon chicken bouillon

  • 80 grams crab meat, drained

  • Slurry (combine 2 tablespoons water and 2 teaspoons potato or cornstarch)

  • 1 egg white, beaten


  1. Heat vegetable oil in a frying pan and add one egg plus egg yolk and the rice. Cook until rice is nice and dry.

  2. Add in crab meat and green onions. Tear lettuce leaves into the mixture and cook until lettuce is wilted. Season with salt and soy sauce.

  3. Combine sesame oil, scallions and ginger in a small saucepan to make the sauce.

  4. Add water, chicken bouillon, sake and crab meat and cook until it comes to a low boil.

  5. Add in the slurry and cook until thickened. Add in the egg white and cook until egg is no longer runny.

  6. Pour sauce over the fried rice and top with additional crab meat.
