Loaded Baked French Fries With Hidden Veggies

  • 2 large russet potatoes
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon chili powder
  • 1 teaspoon onion powder
  • 1 tablespoon nutritional yeast

Veggie Guacamole

  • 3 ripe avocados
  • 1 cup spinach
  • 1 teaspoon garlic powder
  • Salt and pepper
  • 1 lime
  • 1/2 cup pre-made pico de gallo

Toppings

  • 1 can black beans, rinsed
  • 1/4 cup finely chopped red bell pepper
  • 1 jalapeño, thinly sliced
  • 3 tablespoons scallions, chopped
  • 1/4 cup broccoli micro-greens

Steps

Loaded Baked French Fries With Hidden Veggies

  1. Preheat oven to 450 degrees.
  2. Cut potatoes into pieces the size of steak fries. Place in a mixing bowl and toss with olive oil, salt, chili powder and onion powder.
  3. Lay on a baking sheet and sprinkle nutritional yeast over the top. Bake for 30 minutes.
  4. Plate fries. Top with black beans. Add chopped red pepper, jalapeño slices and scallions. Dollop the guacamole on top, and top with micro-greens.

Veggie Guacamole

  1. Blend one avocado with spinach then transfer to a medium mixing bowl.
  2. Add the additional two avocados, garlic powder, salt, pepper and juice from one lime. Use a potato masher to mash the avocados.
  3. Stir in the pico de gallo.
