Loaded Baked Potato Dip
This creamy loaded baked potato dip is the perfect dish to gather around this holiday season and is a fun way to sneak some veggies in for your little ones. Sponsored by Daisy.
Ingredients
- 8 oz sour cream
- ½ cup mashed potatoes
- 4 oz cream cheese, room temperature
- 1 cup shredded cheddar cheese
- 6 strips of bacon, cooked till crispy and chopped
- ¼ tsp onion salt
- ¼ tsp garlic powder
- 3 scallions, green tops cut thinly
- Fresh veggies for dipping

Steps
- Peel and boil potatoes for about 20 minutes or until soft. Drain and mash.
- Preheat oven to 350 degrees F.
- Follow direction on packaging to cook bacon (either oven, stove top, or microwave). Crumble into bits once cooled a bit.
- In a medium sized bowl, mix together sour cream, cream cheese, and mashed potatoes until smooth.
- Add ¾ cup of the shredded cheddar cheese, most of the bacon bits, and most of the scallions. Mix together.
- Transfer to small casserole dish, top with remaining cheese
- Bake for 30 minutes until the cheese is melted and bubbly around the edges.
- Top with remaining bacon and scallions. Serve with fresh veggies to dip.
