Enjoy the tender, buttery goodness of lobster rolls with these adorably cute and cheesy sliders.
3 (1 1/2 pounds each) lobsters, steamed and meat removed
2 tablespoons mayonnaise
1 tablespoon fresh lemon juice
2 tablespoons fresh chives, minced, plus more for garnish
Kosher salt and pepper
2 packages Hawaiian rolls
3 tablespoons unsalted butter
4 garlic cloves, grated
1 tablespoon freshly chopped parsley
1/2 cup shredded Gruyere cheese
1/2 cup shredded part skim mozzarella cheese
Chop the lobster meat into bite-sized pieces and place in a large bowl.
In a separate smaller bowl, whisk together the mayonnaise and lemon juice until combined. Stir in chopped chives and season with salt and pepper to taste. Gently toss the dressing with the lobster meat and set aside.
Preheat oven to 350°F, and prepare a 9x13 baking dish with nonstick cooking spray.
Using a sharp knife, cut 1-2 inch holes in the top of each Hawaiian roll. Set aside.
Add unsalted butter and garlic to a small saucepan. Simmer until garlic is softened and fragrant. Stir in parsley and remove from heat.
Use a pastry brush to brush the insides of the rolls with garlic butter. Sprinkle the inside of rolls evenly with salt and place into the prepared pan.
Bake the rolls until slightly golden brown, about 10-12 minutes. Remove the rolls from the oven and increase the heat to broil.
Fill each roll with the coated lobster, top with shredded cheeses and broil until melted. Sprinkle with chives and serve immediately.
