Lucky Charms Cake

A cross between a cake and Rice Krispies treats, this three-layer cake is magically delicious!


  • 4 tablespoons butter
  • 4 cups mini marshmallows
  • 6 cups Lucky Charms, plus more for decorating
  • Vegetable spray
  • White icing


  1. In a pot over medium-low heat, add butter and heat until melted. Add marshmallows and continue to cook and stir until melted. Turn heat off, add Lucky Charms and mix until cereal is evenly coated.
  2. Spray three, 6-inch round cake pans with vegetable spray, and evenly divide the mixture among them. Use a round of parchment paper to press down on the mixture and form each into a round cake shape. Set aside for a few minutes to allow them to set and cool completely.
  3. Add icing to a piping bag. Place one cake layer on a plate, and pipe icing around the top. Add a second layer and top with icing. Add the third layer, and pipe an icing swirl on the top. Sprinkle with more Lucky Charms to decorate.
