Macaroni Pie, a Caribbean baked macaroni dish.

Macaroni Pie


  • 1 pound macaroni noodles (I used the authentic kind they have in Trinidad, but if you can't find them, just get elbow pasta)

  • 2 tablespoons butter

  • 2 cups shredded cheddar cheese

  • 2 cups shredded mozzarella cheese

  • 2 cans evaporated milk

  • 2 eggs

  • 2 garlic cloves, minced

  • 2 onions, minced

  • 2 tablespoons ketchup

  • 2 teaspoons mustard

  • 1 teaspoon black pepper

  • A couple squirts of hot sauce, if you want it on top


  1. In a large bowl, mix the egg, evaporated milk, garlic cloves, onions, ketchup, mustard, black pepper, hot sauce.

  2. Boil the pasta. Once it's al-dente, drain it. Then mix butter in with the noodles and add the shredded cheeses.

  3. Stir the milk and egg mixture in with the noodles and pour it into a greased casserole dish. Top it with more shredded cheese and a bit more evaporated milk, then pop it in the oven at 350 degrees for 45-50 minutes.

- This is macaroni pie. It's like mac and cheese on steroids. So this is actually a Trinidadian specialty, and they know what they're doing. So we've got our boiled and drained noodles here. Put a little butter in it, and now we're going to add our shredded cheeses. And we're gonna reserve some of the shredded cheese to put on at the very end. Right before it goes into the oven. So we want to mix these in together. And then let's mix together the rest of the stuff that will be baked with it. So we've got two eggs. And two chopped onions. And really have fun with this. Like put in other things that you would enjoy. Carrots are really good with this. Red peppers. Throw in whatever you have on hand. And then you add two cans of evaporated milk. And your minced garlic clove. And there's more. Ketchup, mustard, salt, and pepper. The fun just keeps on going. Gotta have salt and pepper. Gotta. And then do la mixy mixy. And now we combine the pasta and the cheese in with the liquid. We'll give it a couple stirs, and then it's ready to go into the oven. How easy was that, right? That's why I love this recipe. So we've got our buttered casserole dish. We'll just add it to that. Smooth it out. Add the rest of our shredded cheese. Oh, because this cheese is gonna get melty and nice and browned in the oven. Oh, oh, oh! Oh, now I'm getting excited. All right, and now we pop this bad boy in the oven at 350 degrees for 45 to 50 minutes. Oh, here we go. Oh my gosh, I'm really excited. It smells amazing. I wish you guys could smell this. And I wish you could eat it, but I'll just have to have a bite for you. Oh my gosh. Oh, the melty cheese. I like it with a little sriracha on top. Oh, oh, oh, yeah! All right, let's dig in. Oh my gosh. You guys, this dish! This dish is what's up! It's delicious, it's indulgent, it's like the best kind of comfort food. And the cheese on the edges and on top where it's browned is crispy. You get a nice little crunch. As always guys, keep it quirky.
