No need to worry about the summer heat – these margaritas will stay fresh all evening long!

Margarita Jellies

Ingredients

  • 2 cups tequila

  • 2 cups cointreau or triple sec

  • 8 packets (about 1/2 cup) powdered gelatin

  • 1 1/2 cups fresh lime juice

  • 2 tablespoons sugar

  • 4 cups club soda

  • 8 packets (about 1/2 cup) powdered gelatin

  • Fresh limes

Instructions

  1. Make the margarita jelly: Combine the tequila and cointreau in a bowl and sprinkle 8 packets of gelatin on top. Let the gelatin bloom for 5 minutes. Pour into a large pot along with the lime juice and sugar. Set the pot to medium heat and bring to a simmer, whisking constantly. Pour into any large container of your choice and place in the freezer until the jelly has set, about 2-3 hours.

  2. Make the club soda jelly: Sprinkle 8 packets of gelatin on top of the club soda and let the gelatin bloom for 5 minutes. Pour into a large pot and set to medium heat. Bring to a simmer, whisking constantly. Pour into a large container and place in the freezer until the jelly has set, about 2-3 hours.

  3. Assembly: Cut the margarita jelly into large cubes and pulse in a food processor until it resembles crushed ice. Repeat with the club soda jelly, then mix the 2 flavors together. Spoon into margarita glasses and garnish with a lime segment. Enjoy!
