Matcha Churros Parfait

Deliciousness is what happens when you put crispy matcha churro bowls and ice cream together.


  • 4 eggs
  • 50 grams butter
  • 240cc water
  • 2 tablespoons sugar
  • 100 grams flour
  • 20 grams matcha powder
  • Whipped cream
  • Vanilla ice cream
  • Matcha ice cream
  • Sweetened adzuki bean paste
  • Sugar preserved chestnuts
  • Warabi mochi
  • Mint
  • Kuromitsu (Japanese black sugar syrup)


  1. In a saucepan, combine butter, sugar and water. Bring mixture to a boil. Then immediately turn heat down to low.
  2. Add in flour and matcha powder and mix until combined. Turn off heat and let mixture cool for 5 minutes.
  3. Add in eggs one at a time and mix until well combined.
  4. Transfer mixture to a piping bag.
  5. Flip a muffin pan upside down and pipe the mixture onto the muffin cups. Refrigerate until firm.
  6. Carefully lift the churros cups off the muffin pan. Deep-fry in hot oil (160 degrees C) for 5 minutes.
  7. Transfer churros cup to a plate and fill with ice cream and other toppings.
