Matcha Mini-Crepes with Mochi

Enjoy this colorfully sweet confection made with mochi, matcha, red bean, and strawberries.


  • 2 squares mochi
  • 6 ounces adzuki paste
  • 12 strawberries
  • Matcha
  • Crepe batter:
  • 1/2 tablespoon matcha
  • 3/4 cup pancake mix
  • 1/2 cup milk


  1. Slice each mochi square into six thin pieces.
  2. Mix together ingredients for crepe batter.
  3. On a 6-inch square of wax paper, spoon out the crepe batter, smoothing into a 5-inch circle. Lay one mochi slice on top. Place onto a plate and heat in the microwave for 30 seconds.
  4. Peel off the wax paper while still warm. Add 2 strawberries and a spoonful of adzuki paste. Fold the edges of the crepe up and around the filling. Allow to cool slightly then sprinkle with matcha before serving.
