Matcha Mini-Crepes with Mochi

  • 2 squares mochi
  • 6 ounces adzuki paste
  • 12 strawberries
  • Matcha

Crepe Batter

  • 1/2 tablespoon matcha
  • 3/4 cup pancake mix
  • 1/2 cup milk

Steps

Matcha Mini-Crepes with Mochi

  1. Slice each mochi square into six thin pieces.
  2. On a 6-inch square of wax paper, spoon out the crepe batter, smoothing into a 5-inch circle. Lay one mochi slice on top. Place onto a plate and heat in the microwave for 30 seconds.
  3. Peel off the wax paper while still warm. Add 2 strawberries and a spoonful of adzuki paste.
  4. Fold the edges of the crepe up and around the filling.
  5. Allow to cool slightly then sprinkle with matcha before serving.

  1. Mix together ingredients for crepe batter.
