Meat and Egg Muffin
Start your morning with a protein-packed and completely breadless muffin made with ground beef, egg and loads of flavor.
Ingredients
- 1 pound ground beef
- Salt
- Black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 6 eggs
- 2 tomatoes, chopped without seeds
- 1 cup grated mozzarella
- 1 tablespoon parsley
Steps
- Preheat oven to 390 degrees. Grease a muffin tin with nonstick cooking spray.
- In a medium bowl, add the ground beef, salt, pepper, garlic powder, onion powder and paprika. Use hands to combine; set aside.
- In a separate bowl, add the eggs, salt and pepper and whisk until combined. Add the chopped tomatoes, mozzarella and parsley. Set aside.
- Divide the meat among the muffin tin openings, pressing to form cups. Pour some egg mixture into each meat cup.
- Bake for 30 minutes. Allow to cool before serving.
