Meat and Egg Muffin

Start your morning with a protein-packed and completely breadless muffin made with ground beef, egg and loads of flavor.


  • 1 pound ground beef
  • Salt
  • Black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 6 eggs
  • 2 tomatoes, chopped without seeds
  • 1 cup grated mozzarella
  • 1 tablespoon parsley


  1. Preheat oven to 390 degrees. Grease a muffin tin with nonstick cooking spray.
  2. In a medium bowl, add the ground beef, salt, pepper, garlic powder, onion powder and paprika. Use hands to combine; set aside.
  3. In a separate bowl, add the eggs, salt and pepper and whisk until combined. Add the chopped tomatoes, mozzarella and parsley. Set aside.
  4. Divide the meat among the muffin tin openings, pressing to form cups. Pour some egg mixture into each meat cup.
  5. Bake for 30 minutes. Allow to cool before serving.
