Meatloaf Filled with Mashed Potatoes

When your average meatloaf just won't do the trick, fill it with mashed potatoes and cover it with bacon.

Ingredients

  • 2 pounds ground beef
  • 2 teaspoons garlic powder
  • 1 tablespoon powdered onion soup mix
  • Salt, to taste
  • Chili powder, to taste
  • Basil leaves
  • 2 eggs
  • 1/2 cup flour
  • 6 cooked potatoes, mashed
  • 3 1/2 tablespoons butter
  • 1/4 cup heavy cream
  • 1/4 cup milk
  • 5 ounces ham
  • 5 ounces mozzarella cheese, sliced
  • 5 ounces bacon, sliced
  • 2 tablespoons honey

Steps

  1. Preheat oven to 350 degrees.
  2. In a bowl, combine the ground beef, garlic powder, onion soup mix, salt, chili powder, basil leaves, eggs and flour. Mix well then set aside.
  3. In a saucepan over medium heat, add the mashed potatoes, butter, cream and milk. Mix well until the butter melts. Season with salt and pepper. Set aside.
  4. Prepare a work surface with plastic wrap. Lay meat mixture on top and use hands to flatten into a rectangle. Top with slices of ham, followed by the mashed potatoes and cheese slices. Use the plastic wrap to roll meat up into a log. Transfer to a baking dish. Cover with bacon slices and drizzle with honey. Bake for 1 hour. Allow to cool slightly, then slice and serve.
