Melon and White Wine Terrine

  • ½ cantaloupe
  • ½ honeydew
  • ¼ cup white wine
  • ¼ cup water
  • 2 tablespoons granulated sugar
  • 2 tablespoons gelatin (microwave in ¼ cup water to prepare, make sure dissolved)
  • For the cream:
  • ⅓ cup milk
  • 2 tablespoons granulated sugar
  • 3 tablespoons gelatin (microwave in ½ cup water to prepare, make sure dissolved)
  • For toppings:
  • Whipped cream
  • Gold leaf
  • Fresh mint


  1. In 2 medium glass bowls, use a melon baller to scoop out each melon, one in each bowl.
  2. In a loaf mold, add the melon balls.
  3. In a bowl, mix white wine, water, and sugar then microwave, at 500W, for 1 minute.
  4. Next, add gelatin. Stir together and pour over top of the melons.
  5. Place in refrigerator until firm.
  6. In a separate bowl, mix milk and sugar, then microwave, at 500W, for 30 seconds.
  7. Add gelatin and mix.
  8. Next, pour cream over the hardened melon jelly, and place in fridge, until it becomes firm.
  9. Remove from fridge, and plate. Decorate with whip cream, gold leaf, and mint to finish!
