Ingredients

  • 4 egg whites (130g), room temperature
  • 1 cup (200 grams) caster sugar
  • 1 teaspoon (5 grams) vanilla extract
  • Pinch of salt
  • Food coloring of choice
  • 2/3 cup (200 grams) whipping cream
  • 1 tablespoon (10 grams) powdered sugar
  • 1 teaspoon (5 grams) vanilla extract
  • Egg shaped candies

Steps

  1. Preheat oven to 175 F (80C).
  2. Whip egg whites until foamy. Gradually add sugar and whip until firm peaks form. Add vanilla extract and food color if used and mix to combine.
  3. Transfer the mixture into a piping bag fitted with a large star tip.
  4. On a baking sheet lined with parchment paper make 3 inch (8 centimeters) circles for the nest's base.
  5. Continue making 2 line of meringue on top of outer edge of the base.
  6. Bake for 90 minutes. Turn off the oven and leave the meringue nests inside until the oven is completely cooled, about 23 hours more.
  7. Prepare the filling. Whip the cream until firm, add powdered sugar and vanilla and mix until incorporated.
  8. Place the whipped cream into a piping bag and fill the meringue nests. Decorate with egg shape candies.
