Mini Baileys No-Bake Cheesecakes

Chocolatey, creamy and a little boozy, these cheesecake cups are super simple to make.


  • 16 ounces cream cheese, room temperature
  • 1/2 cup sugar
  • 1/4 cup semisweet chocolate, melted
  • 1/4 cup + 2 tablespoons Baileys
  • 1 cup whipping cream
  • 2 tablespoons Baileys
  • 1 1/2 tablespoon cocoa powder
  • 3 tablespoons confectioner's sugar
  • 15 oreo cookies, crushed
  • Whipped cream
  • Mini chocolate chips
  • Fresh raspberries
  • Fresh mint leaves


  1. Beat the cream cheese, sugar and melted chocolate in a bowl with an electric mixer, until smooth. Add 1/4 cup Baileys and mix until incorporated.
  2. In a separate bowl, beat the whipping cream until thickened. Add 2 tablespoons Baileys, 1 1/2 tablespoon cocoa powder and confectioner's sugar and beat until stiff peaks form.
  3. Place both the cheesecake and the whipped cream in piping bags fitted with round tips.
  4. To assemble, divide half of the crushed oreos between 4 glasses. Divide half of the cheesecake filling between the glasses, piping it into the glasses in even layers. Repeat with half of the whipped cream. Repeat with the remaining oreos, cheesecake and whipped cream.
  5. Chill in the fridge for 15 minutes.
  6. Top with a dollop of whipped cream, mini chocolate chips, a raspberry and a mint leaf. Enjoy!
