Mini Mojito Cheesecake

These no-bake Mini Mojito Cheesecakes are a no-brainer! Theres no excuse not to try it.

Ingredients

  • 2 cups graham cracker crumbs
  • 8 tablespoons (1 stick) melted salted butter
  • 1 cup heavy cream
  • 1 can condensed milk
  • 2 limes, zest and juice
  • 1/4 cup coconut rum
  • 12 ounces softened cream cheese
  • 1/3 cup sour cream
  • Mint to garnish

Steps

  1. Line a 12 cup cupcake pan with plastic wrap.
  2. In a bowl, combine graham cracker crumbs and butter.
  3. Press mixture into each well to create a thin crust.
  4. Let set in freezer.
  5. In a mixer, whip heavy cream into stiff peaks. Reserve whipped cream in a separate bowl.
  6. In the same mixer, combine condensed milk, lime juice, some chopped mint leaves, and rum.
  7. Once combined, add in cream cheese and sour cream.
  8. Then fold in the reserved whipped cream.
  9. Spoon or pipe the filling into the crusts and freeze for at least one hour.
  10. Just before serving, garnish with a thin lime slice and a sprig of mint.
