Mini Pumpkin Cakes

These mini Bundts have such a perfect balance of sweet pumpkin and chocolate chips, that it's kinda scary.


  • 2 1/3 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 pinch of salt
  • 1/2 teaspoon ground cinnamon
  • 4 eggs
  • 1 cup oil
  • 1 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 cups pumpkin puree
  • 1 cup chocolate chips
  • 300 grams melted white chocolate
  • Orange food coloring
  • Cinnamon sticks
  • Mint leaves


  1. In a bowl, mix the flour, baking powder, baking soda, salt and cinnamon. Set aside.
  2. Beat the eggs, oil and sugar with an electric mixer until fully combined, then add the pumpkin puree and beat until you have a very smooth dough.
  3. Gradually add the flour mixture while still beating the batter until all the dry ingredients are incorporated..
  4. Add the chocolate chips and then pour the batter into greased molds with hole in the middle.
  5. Place in an oven pre-heated to 350°F (180°C) for approximately 40 minutes or until toothpick comes out clean.
  6. Mix the chocolate with orange coloring and set aside.
  7. Remove the dough from oven, cover with chocolate and finish with cinnamon stick and mint leaves.
