Mint Oreo Dessert Pizza

When a simple after dinner mint won't do, try this delicious pizza with a mint brownie base and a creamy, marshmallow topping.


  • Base:
  • 18 mint oreos
  • 1 box brownie mix
  • 2 large eggs
  • ¼ cup water
  • ½ cup vegetable oil
  • 1 tsp peppermint extract
  • Frosting:
  • ½ cup vegetable shortening
  • ½ cup unsalted butter, room temperature
  • ½ tsp peppermint extract
  • 1 tsp vanilla extract
  • 1 cup marshmallow fluff
  • 1 ¼ cups confectioner’s sugar
  • green food colouring
  • 10 mint oreos, roughly chopped
  • Sauce:
  • 2 tbsp unsalted butter, room temperature
  • 2 tbsp corn syrup
  • ½ cup chocolate chips


  1. Make the base:
  2. Place the oreos onto the bottom of a 12” pie plate. Set aside.
  3. Combine the brownie mix, eggs, water, oil and peppermint extract. Pour on top of the oreos and smooth the surface. Bake at 350F for 25 minutes, then remove from the oven and cool completely.
  4. Make the frosting:
  5. Beat the shortening and butter with an electric mixer until well combined. Add the peppermint extract, vanilla extract and marshmallow fluff and combine. Gradually add the confectioner’s sugar and beat until fluffy. Add a drop or two of green food colouring and mix until combined.
  6. Spread the filling onto the brownie base and top with the oreos.
  7. Make the sauce:
  8. Combine the unsalted butter, corn syrup and chocolate chips in a microwave-safe bowl. Microwave for 40 seconds, or until melted. Drizzle on top of the pizza and enjoy!
