Mocha Brookies

Cookie? Yes. Brownie? Yes. Coffee? You bet. Who knew life could get this good?

Ingredients

  • 6 ounces good quality dark chocolate, chopped
  • 3 tablespoons unsalted butter
  • 1/4 cup all purpose flour
  • 3 tablespoons cocoa
  • 2 large eggs
  • 1/3 cup sugar
  • 1/3 cup brown sugar
  • 1 tablespoon instant espresso powder
  • Coffee beans, for garnish

Steps

  1. Preheat oven to 375 degrees and line 2 baking sheets with parchment paper.
  2. In a small saucepan over low heat, melt the butter and chocolate together. In a medium bowl whisk together the flour and cocoa together.
  3. Using a stand mixer or a hand held mixture and a large bowl, whip together the eggs, sugar, brown sugar and espresso powder until pale and fluffy.
  4. Fold in the chocolate mixture and the stir in the flour mixture until combined. Let sit for 5 minutes to thicken.
  5. Drop 3 tablespoon mounds onto the prepared sheet, spacing them 2 inches apart. Place a couple coffee beans in the center of each.
  6. Bake for 7 to 9 minutes until puffed and cracked. Let cool on the sheets for 10 minutes.
