Mojito Jellies


Turn your favorite summer cocktail into a dessert — these jellies are so refreshing and perfect for summer!

Mojito Jellies


  • 3-4 tablespoons (3-4 packets) powdered gelatin (if you like firm jellies, use 4 tablespoons gelatin)
 1 1/2 cups club soda

  • 1/4 cup white rum
1/4 cup freshly squeezed lime juice

  • 1/4 cup sugar

  • Small handful mint leaves

  • Limes, thinly sliced

  • 2 cups club soda

  • 1 shot white rum

  • Mint leaves, for garnish

  1. Pour the club soda into a bowl and sprinkle the gelatin on top. Let it sit for 5 minutes, until the gelatin has softened, about 5 minutes.

  2. Pour the club soda, rum, lime juice, sugar and mint leaves into a small pot and whisk until dissolved. Set to medium heat and heat until it just comes to a boil. Remove the mint leaves.

  3. Pour into a shallow container and place in the fridge until fully set. Slice into cubes and place into glasses, along with some thinly sliced limes. Fill the glasses with 1/2 shot of white rum, club soda and garnish with mint leaves and a lime wedge. Enjoy with a spoon!
