Ingredients

Monster Donuts

  • 215 grams flour
  • 1 1/2 teaspoon baking powder
  • 132 grams sugar
  • 187 milliliters milk
  • 65 milliliters oil
  • 60 grams butter
  • 1 tablespoon yogurt
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • Purple food dye

Monster Eyes

  • 100 grams melted white choc
  • Green sprinkles (for eyes)

Chocolate Monster Hair

  • 200 grams white chocolate
  • 80 milliliters cream (at least 35 percent fat content)
  • 2 drops green food dye
  • 1 drop yellow food dye

Steps

Monster Donuts

  1. Preheat a fan-forced oven to 180C (356F) or 160C (320F) for a fan-forced oven. Spray a donut baking tray with cooking oil and set aside.
  2. In the bowl of a stand mixer fitted with the paddle attachment, add the flour, baking powder, caster sugar and salt. Turn the mixer on low speed and allow it to mix for a couple of minutes to help everything combine well (alternatively you may do this by sifting the ingredients together). Add the softened butter and let it mix until it resembles a fine sand-like texture.
  3. Next, add milk, eggs, yogurt, oil and vanilla extract in a large jug and whisk well.
  4. Add wet ingredients to dry ingredients in a slow and steady stream until no dry ingredients are visible. Scrape down the bowl and mix for another 20 seconds.
  5. Fill donut tray holes 1/2 way and bake for 12 min. Once baked transfer to a cooking wrack to cool down completely.
  6. Add green ganache to a piping or zip lock bag and pipe little spikes on the top of each donut.
  7. Finish off by randomly placing monster eyes on ganache before serving.

Monster Eyes

  1. To make monster eyes, add melted white choc to a piping or sip lock bag and pipe little dollops of choc on a sheet of baking paper. Place a green sprinkle on each one before it sets.

Chocolate Monster Hair

  1. To prepare Chocolate Monster Hair add cream and chocolate to a microwave safe bowl and microwave for 20 seconds at a time, mixing each time until smooth.
  2. Add green and yellow food dye and mix until well combined. Chill for 1 hour and allow to set.
