Mother's Day Waffle Cake

Impress your mom with this breakfast dessert. Or is it dessert for breakfast?

Ingredients

Waffle Batter

  • 2 1/4 quinoa flour
  • 4 tps baking powder
  • 1/2 tps salt
  • 1 1/4 skim milk
  • 1/2 cup water
  • 2 eggs
  • 1/2 vegetable oil
  • 1 tablespoon vanilla

Icing

  • 1 blocks, 500 grams of cream cheese, softened
  • 1/2 cup butter
  • 1/2 cup raspberry jam
  • 2 cups icing sugar
  • Raspberries
  • Icing sugar for sprinkling

Ganache

  • 1/2 cup dark chocolate
  • 1/2 cup whipping cream

Steps

Waffle Batter

  1. In a large bowl combine quinoa flour, baking powder and salt. Once mixed add in the rest of the ingredients and stir through to make a smooth thin batter. Cook in waffle maker.
  2. This recipe will make 8 waffles which will freeze well for up to 6 weeks. Let them cool completely before freezing.

Icing

  1. Combine all ingredients into a bowl and beat with an electric mixer until smooth.
  2. To assemble, stack waffles one on top of the other with icing in between. Ice the sides completely and then let set in the freezer for 20 minutes.

Ganache

  1. Combine the chocolate and cream in a bowl and microwave for 30 seconds intervals stirring in between until smooth.
  2. Pour over the set cake and top with raspberries.
