Mushroom Cream Croquette

What happens when cream of mushroom meets bacon and a deep fryer?

Ingredients

  • 30 grams butter
  • 4 slices bacon, cut into small pieces
  • 1/2 bunch shimeji mushrooms, minced
  • 1/2 onion, minced
  • Salt
  • Pepper
  • 50 grams shredded cheese
  • 1 teaspoon vegetable oil
  • 1 tablespoon white wine
  • 3 tablespoons flour
  • 250 cc milk
  • Flour
  • Egg
  • Panko bread crumbs

Steps

  1. Heat vegetable oil in a frying pan and cook bacon, shimeji and onions on medium heat until onions are translucent.
  2. Season with salt and pepper.
  3. Add white wine and cook until for a couple of minutes to evaporate alcohol.
  4. Mix in flour and milk and simmer until thickened.
  5. Spread mixture in a square pan and refrigerate for at least 30 minutes.
  6. Once mixture has cooled sufficiently, divide into 8 portions.
  7. Roll into an oval and coat first in flour followed by the egg. Finally, coat well with panko.
  8. Deep fry until crispy and golden brown. Serve with lemon wedges.
