Enjoy rich, chocolatey coconut bars made with natural coloring and no processed sugar.
For the unicorn bars
1 cup coconut cream
3 Tbsp rice malt maple syrup
4 Tbsp coconut butter
2 cups desiccated coconut
2 Tbsp crushed freeze dried raspberries + extra to sprinkle
2 Tbsp crushed freeze dried blueberry
½ tsp turmeric powder
For the chocolate coating
½ cup melted coconut oil
3/4 cup raw cacao powder
1/4 cup maple syrup
For the bars, combine coconut cream, coconut butter, and rice malt syrup in a large mixing bowl. Mix well until everything is combined
Once combined, fold in desiccated coconut
Divide mixture between 3 bowls
Add raspberry to one bowl, freeze dried blueberry to the second and turmeric powder to the third to create different colours (pink, purple, yellow). If you feel your colours need a little bit more pop add some natural food colouring. This will make your Paleo bars not paleo.
Press each coloured layer of coconut into a baking dish measuring 20 x 10cm. Once pressed in freeze for 3 hours.
For the chocolate coating, whisk the ingredients together in a bowl until smooth
Once set, into bars and individually coat each bar with the melted chocolate using two forks to submerge bars into chocolate, allow excess to drip off. Place on a cooling wrack, sprinkle with crushed freeze dried raspberries and chill for 30 minutes.
