No-Bake Fig Cheesecake

So gorgeous, nobody will believe how easy they were to make.

Ingredients

  • 2/3 cup cottage cheese
  • 4 ounces cream cheese
  • 4 ounces yogurt
  • 1/2 cup cream
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 1/2 teaspoon powdered gelatin (sprinkled into 3 tablespoons water and microwaved for 15 sec at 500 watts)
  • Toppings: 2 fresh figs and 6 biscuits

Steps

  1. Slice figs thinly and place one slice into each muffin tin. Cut the rest into 1 centimeter cubes and set aside.
  2. In a blender, combine all ingredients for the cheesecake and mix well.
  3. Pour mixture into muffin tins and top with chopped figs.
  4. Place a biscuit on top of each cheesecake.
  5. Chill in refrigerator until firm.
