No-Bake Mango Cheesecake

Easy no-bake mango cheesecake!


  • Cheesecake Mixture:
  • 150g cream cheese
  • 150g frozen mango
  • 150g heavy cream
  • 50ml mango juice
  • 50g granulated sugar
  • 10g gelatin (soak in 2 tablespoons of water and heat in a 500W microwave for 15 seconds)
  • 1 tbsp lemon juice
  • Mango Jelly:
  • 80ml mango juice
  • 5g granulated sugar
  • 3g gelatin (Soak in 1 tablespoon of water and heat in a 500W microwave for 10 seconds)
  • Crust:
  • 10 coconut sablé biscuits (any type of biscuits will do)
  • 30g melted butter
  • Toppings:
  • Heavy cream, as needed
  • Mango, as needed
  • Herbs, as needed


  1. Put coconut sablé biscuits in a plastic bag and finely crush them with a rolling pin. Transfer the cookie crumbs to a bowl and stir in melted butter. Press crumbs into the bottom of a cake pan with a spoon, then chill until ready to fill.
  2. Blend all the ingredients for the cheesecake mixture in a mixer. Pour the mixture into the cake pan from step 1 and let it chill in the fridge until solid.
  3. Whisk together all the ingredients for the mango jelly and pour it on top of the cheesecake from step 2. Top with heavy cream and let it cool again. Tip: strain the mango juice mixture through a mesh strainer for a smoother finish.
  4. Remove from the cake pan and top with mango and herbs. Enjoy!
