Easy no-bake mango cheesecake!

Ingredients

No-Bake Mango Cheesecake

  • 150g cream cheese
  • 150g frozen mango
  • 150g heavy cream
  • 50ml mango juice
  • 50g granulated sugar
  • 10g gelatin (soak in 2 tablespoons of water and heat in a 500W microwave for 15 seconds)
  • 1 tbsp lemon juice

Crust

  • 10 coconut sablé biscuits (any type of biscuits will do)
  • 30g melted butter

Mango Jelly

  • 80ml mango juice
  • 5g granulated sugar
  • 3g gelatin (Soak in 1 tablespoon of water and heat in a 500W microwave for 10 seconds)

Toppings

  • Heavy cream, as needed
  • Mango, as needed
  • Herbs, as needed

Steps

No-Bake Mango Cheesecake

  1. Blend all the ingredients for the cheesecake mixture in a mixer. Pour the mixture into the cake pan with the crust and let it chill in the fridge until solid.
  2. Top with heavy cream and let it cool again. Tip: strain the mango juice mixture through a mesh strainer for a smoother finish.
  3. Remove from the cake pan and top with mango and herbs. Enjoy!

Crust

  1. Put coconut sablé biscuits in a plastic bag and finely crush them with a rolling pin.
  2. Transfer the cookie crumbs to a bowl and stir in melted butter.
  3. Press crumbs into the bottom of a cake pan with a spoon, then chill until ready to fill.

Mango Jelly

  1. Whisk together all the ingredients for the mango jelly and pour it on top of the cheesecake.
