Ingredients
No-Bake Sweet Potato Nut Butter Bars
- 2 1/2 cups rolled oats, divided
- 1/4 cup flaxseeds, ground
- Salt, to taste
- 1 large sweet potato (cooked, skin still on)
- 1/3 cup almond butter
- 1/3 cup peanut butter
- 1/4 cup coconut oil
- 2 teaspoons cinnamon
- 5 tablespoons maple syrup
- 1 1/2 teaspoon vanilla extract
Chocolate Topping
- Cacao powder
- Coconut oil
- Maple syrup, to taste
Steps
No-Bake Sweet Potato Nut Butter Bars
- In a food processor, blend 1 cup of the rolled oats into flour. Transfer to a large bowl, and add the rest of the rolled oats, ground flaxseeds, and salt.
- Using the same food processor or blender, add all the wet ingredients (the cooked sweet potato, butters, cinnamon, maple syrup, coconut oil and vanilla). Blend until smooth.
- Scrape the wet ingredients into the bowl with the dry ingredients and mix until fully combined.
- Transfer the mixture to a lined baking dish and place in the freezer or fridge to harden.
- Cut the bars into squares and drizzle the chocolate topping over the top.
- Return the bars to the refrigerator or freezer to set the chocolate.
Chocolate Topping
- In a medium-sized bowl, combine cacao powder, coconut oil and maple syrup.
