• 2 large eggs, divided
  • 1/3 cup powdered sugar
  • 2/3 cup Nutella
  • 5 tablespoons unsalted butter, melted
  • 3 tablespoons vegetable oil
  • 3 large, super ripe bananas, mashed well
  • 1/2 cup light brown sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 4 bananas, thinly sliced


  1. Preheat the oven to 350 degrees. Lightly grease a loaf pan.
  2. In a bowl, whisk 1 egg and the powdered sugar until foamy. Fold in Nutella until evenly incorporated.
  3. In a large bowl, combine the butter, vegetable oil and mashed bananas. Whisk in the second egg, light brown sugar and vanilla extract until smooth and thick.
  4. In another bowl, whisk flour, baking soda, ground cinnamon and salt. Fold the dry ingredients into the banana/butter mixture until just evenly combined, but not over-worked.
  5. Pour two-thirds of the batter into the prepared loaf pan.
  6. Line up three-fourths of the thinly sliced bananas along the batter, then top with a layer of Nutella mixture.
  7. Cover with a final layer of the remaining batter.
  8. Using a toothpick or skewer, gently swirl the top layer and the Nutella together without disturbing the banana slices.
  9. Top with slices of bananas, facing up.
  10. Bake for 45 to 50 minutes, until a wooden skewer comes out clean from the banana layer, but bread is still runny and gooey in the center of the molten chocolate. Let cool in the pan for 15 minutes before removing.
