Ode to Bubble Tea

A bubble tea so good we wrote a poem about it.


  • For the iced tea:
  • 2 cups strawberries, hulled
  • 4 black tea bags
  • 1 lemon, juiced
  • Agave to taste
  • Water
  • Ice for serving
  • For the boba:
  • 1 ½ cups quick-cooking tapioca pearls
  • 6 cups water
  • Agave to taste


  1. Cook instant tapioca pearls according to package instructions. Rinse in cold water, place in a container and stir in agave to your liking. Set aside.
  2. Steep tea bags in 4 cups of hot water for 5 minutes. Remove tea bags and allow the tea to cool.
  3. Blend strawberries, lemon juice, and sweetener of your choice until smooth. Pass the blend through a strainer and pour into a pitcher, along with cooled tea, plus 3 cups cold water.
  4. To serve, add ¼ cup boba to the bottom of a glass, top with ice, and add strawberry tea. Use a large straw to drink the bubble tea well.
