Oeufs à la Neige Floating Meringue on Custard Sauce

Ingredients

Oeufs à la Neige: Floating Meringue on Custard Sauce

  • 2 egg whites
  • A pinch of salt
  • 20g sugar

Sauce

  • 2 egg yolks
  • 40g sugar
  • 140ml milk, warmed
  • 3 drops of vanilla extract
  • Caramel sauce, as needed

Steps

Oeufs à la Neige: Floating Meringue on Custard Sauce

  1. Combine egg whites and salt in a bowl and mix until foamy.
  2. Fold in sugar, half the amount at a time, and mix until it holds a stiff peak.
  3. Transfer the mixture to another bowl, making sure there are no gaps between the mixture and the bowl. Heat in a 600W microwave for one minute.
  4. Place on a plate, pour the sauce around it, and drizzle caramel sauce on top. Enjoy!

Sauce

  1. Combine the egg yolks and sugar in a bowl and mix until light in color.
  2. Mix in the warm milk, then transfer to a saucepan.
  3. Keep stirring while it is on heat until it thickens.
  4. Add vanilla extract, then turn off heat and let it cool.
