Crispy Crunchy Okra Fries

You've had green bean fries before, but have you tasted Indian-spiced, breaded and deep-fried okra fries?


  • 3/4 pounds Indian okra
  • 1 1/2 teaspoon garlic, grated
  • 1 1/2 teaspoon ginger, grated
  • 2 tablespoons besan (chickpea flour)
  • 1 tablespoon cornstarch
  • 1 teaspoon red chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon amchur powder
  • 1/2 teaspoon ground cumin


  1. Wash and dry okra thoroughly. Remove tops and bottom with a paring knife, and split down the middle vertically to expose flesh and seeds on the inside.
  2. Rub ginger and garlic into okra.
  3. Combine besan, cornstarch, chili powder, salt, amchur and cumin. Scatter mixture over okra, and toss to coat.
  4. Heat oil in a deep frying pan to 400°F. Fry okra in batches for 2-3 minutes until golden. Drain on paper towels, and sprinkle with a little more salt and chili powder. Enjoy right away!
