Ingredients

Onion Ring Cups

  • 2 onions
  • 1/2 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon smoked paprika
  • 1 tablespoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3/4 cup milk
  • 1 egg, beaten
  • 2 cups breadcrumbs
  • Vegetable oil, for frying

Steak

  • 1 tablespoon vegetable oil
  • 1 pound thinly sliced or shaved steak
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup barbecue sauce
  • 2 tablespoons parsley, minced

Steps

Onion Ring Cups

  1. Peel skin from onions. Cut off the ends of the onions about 2 inches from the root, leaving the bottom connected. Carefully pop out the rings of the onion. They should resemble small cups; some may have a small hole in the bottom. Thinly slice the remaining middle of the onions and set aside.
  2. In a medium-sized pot, add vegetable oil until it reaches 3/4 of the way full. Heat over high heat until temperature reaches 350 degrees.
  3. In a mixing bowl, add flour, baking powder, smoked paprika, garlic powder, salt and pepper. Dredge onion cups in flour mixture and set aside.
  4. In a small bowl, combine egg and milk; slowly pour into flour mixture. Whisk until combined and smooth.
  5. Dip onion cups into the batter and roll in breadcrumbs, shaking off excess. In small batches, carefully drop onions in heated oil. Fry until golden brown then remove to a wire rack.
  6. Fill onion cups with steak and onion mixture. Drizzle with barbecue sauce and parsley.

Steak

  1. Heat oil in a sauté pan over medium-high heat.
  2. Add sliced onion and cook until soft and browned, about 4 to 5 minutes.
  3. Add steak, salt and pepper.
  4. Cook until steak is browned and removed from heat.
