Orange Mousse Cake

When it warms up, you need a sweet treat to cool down—and a citrusy, fluffy no-bake cake is just the thing.


  • 3 mandarin oranges
  • Whipped cream
  • Mint
  • Orange gelatin:
  • 150 ml orange juice
  • 10 grams sugar
  • 5 grams powdered gelatin
  • Orange mousse:
  • 300cc orange juice
  • 50 grams sugar
  • 1 tablespoon lemon juice
  • 1 egg white, beaten until stiff
  • 200 ml heavy cream, beaten until smooth and thick
  • 10 grams powdered gelatin


  1. To make the orange gelatin, combine the orange juice and sugar in a saucepan. Once mixture comes to a boil, turn off the heat and add the gelatin and mix until dissolved. Set aside to cool.
  2. Peel and cut off the top and bottoms of the oranges. Cut them in half. Place the orange halves flat side down into a cake pan. Pour in the orange gelatin mixture and refrigerate until firm.
  3. To make the orange mousse, put the orange juice in a saucepan and cook until it has reduced to about half. Add in sugar, lemon juice, water and gelatin and mix until dissolved. Set aside until cool.
  4. Transfer to a bowl and add in cream. Next fold in the egg whites and pour into the cake pan.
  5. Refrigerate until the mousse is set.
  6. Turn the cake over onto a plate and decorate with whipped cream and mint if desired.
